植物油是人们在厨房中必不可少的材料，市场需求很大，随着社会的不断进步，人们的生活水平不断提高，人们对植物油的营养功能更加重视，由于现在市面上的植物油种类繁多，如何选择并与食物合理的搭配以达到营养健康就显得十分重要。本文对植物油中的大豆油、大豆色拉油、花生油、玉米油、菜籽油、橄榄油、芝麻油、调和油通过气相色谱-质谱联用仪测出其脂肪酸的含量并进行对比分析。
　　
结果表明调和油中饱和脂肪酸，单不饱和脂肪酸和多不饱和脂肪酸的比例最适合人体营养需要，其他植物油的营养功能各有特点。
